Peach Ginger Switchel

1/4 cup organic unfiltered apple cider vinegar with the mother

1/3 cup raw honey or real maple syrup

1 inch knob of fresh ginger root, peeled and thinly sliced (I use a peeler to get nice long thin ribbons of ginger)

1 cup organic peaches, frozen works too (or any berry of your choice)

6 cups filtered water

Combine all the ingredients in a large jar with a lid. Shake to combine. At this point, you can drink it over ice or refrigerate and let steep from 12 to 24 hours.  Stir well before serving.
