Beet Carrot Apple Slaw

2 apples, chopped into bite sizes (granny smith + ambrosia are good options)

4 carrots, grated*

3 beets, grated*

2 tbsp raw honey

2 tbsp apple cider vinegar

2 tbsp olive oil

1 tbsp poppy seeds

1/2 tsp sea salt

* gotta food processor with a grating blade? Works amazing!

In a large bowl, stir together apples, carrots and beets. In a smaller bowl, whisk together honey, vinegar, oil, poppy seeds and sea salt. Toss with dressing with slaw just before serving.

Tip: Slaw is excellent the next day, too!
