½ red cabbage, finely sliced⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 large carrots, grated⠀⠀⠀⠀⠀⠀⠀⠀⠀
dried cranberries (optional)⠀⠀⠀⠀⠀⠀⠀⠀⠀
pumpkin seeds (optional)

Dressing

1/2 cup of egg-free mayo⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 tablespoons apple cider vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀

Coleslaw is one of my favourites to prep for the whole week because the flavours just get better as the week goes on…if it lasts that long!
