Chocolate Buckwheat Granola


3 cups rolled oats

2 cups buckwheat groats

1/2 cup unsweetened coconut flakes

3 tbsp chia seeds

2 tbsp coconut sugar (optional)

1/4 cup raw honey

1/4 + 2 tbsp coconut oil

2 tsp vanilla extract

1/2 cup cacao powder

1/4 tsp of sea salt


Preheat oven to 350F and line a baking sheet with parchment paper.

In a large bowl combine oats, buckwheat, coconut flakes, chia seeds, coconut sugar and sea salt.

In a small pan over low heat, melt coconut oil, then whisk in honey, vanilla, and cacao powder. Whisk until smooth.

Pour chocolate sauce over the dry ingredients and mix well.

Put mixture onto baking sheet and press down with a spoon, spatula or damp hands. Bake for about 16-20 minutes. Keep watch as to not burn in those last few minutes.

Allow to completely cool before storing in an airtight container for up to 3 weeks. Or you can freeze granola.
